Recipe: 90-Second Pancake

Pancakes are a major comfort food but usually can take a while to make. I found this recipe for a 90-second pancake from Low Carb Love and just had to try it. It was so fluffy and simple to make. I recommend enjoy it for breakfast or even as a dessert or snack throughout the day.

Ingredients

  • 3 tbsp almond flour
  • 1 tbsp powdered sweetener 
  • 1/2 tsp baking powder
  • 1 tbsp butter melted
  • 1 large egg
  • 1/2 tsp vanilla extract

Directions

  • Mix everything in a ramekin or microwave-safe bowl
  • Microwave for one minute
  • Add butter and maple syrup
  • Enjoy!
