This recipe of rainbow muffins is perfect for a celebration (birthday, anniversary, graduation, etc.) or literally just because. I made them.. just because 😉 I saw the Birthday Muffins recipe by Lane & Grey Fare and made a few tweaks to make it a bit “healthier.” It is pretty easy to make!

Dry Ingredients
- 2 cups of flour
- 3/4 cups of sugar (I used monk fruit sweetener)
- 2 teaspoons of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
- 1/4 cup of sprinkles (you can use as much as you want)

Wet Ingredients
- 2 tablespoons of cornstarch mixed with 3 tablespoons of water
- 1 1/3 cups of milk (I used almond milk)
- 1/3 cup of vegetable oil (I used canola oil)
- 2 1/2 teaspoons of pure vanilla extract
Directions
- Preheat oven to 375 degrees and grease muffin tin if needed (I am using a nonstick tin which you can find here)*
- Mix together the flour, sugar, baking powder, baking soda and salt
- In a smaller bowl mix cornstarch with water
- In another bowl mix milk, cornstarch / water mixture, vegetable oil, and vanilla extract
- Combine the dry ingredients with the wet ingredients slowly with a spatula
- Pour desired amount of sprinkles into the batter and mix
- Place mixture into a measuring cup for convenient pouring into the muffin tin
- Add additional sprinkles to the top of each muffin, if desired
- Bake for 25 minutes and let cool for 5 minutes
- Enjoy!
