Recipe: Rainbow Muffins

This recipe of rainbow muffins is perfect for a celebration (birthday, anniversary, graduation, etc.) or literally just because. I made them.. just because 😉 I saw the Birthday Muffins recipe by Lane & Grey Fare and made a few tweaks to make it a bit “healthier.” It is pretty easy to make!

Dry Ingredients

  • 2 cups of flour
  • 3/4 cups of sugar (I used monk fruit sweetener)
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/4 cup of sprinkles (you can use as much as you want)

Wet Ingredients

  • 2 tablespoons of  cornstarch mixed with 3 tablespoons of water
  • 1 1/3 cups of milk (I used almond milk)
  • 1/3 cup of vegetable oil (I used canola oil)
  • 2 1/2 teaspoons of pure vanilla extract

Directions

  • Preheat oven to 375 degrees and grease muffin tin if needed (I am using a nonstick tin which you can find here)*
  • Mix together the flour, sugar, baking powder, baking soda and salt 
  • In a smaller bowl mix cornstarch with water 
  • In another bowl mix milk, cornstarch / water mixture, vegetable oil, and vanilla extract
  • Combine the dry ingredients with the wet ingredients slowly with a spatula
  • Pour desired amount of sprinkles into the batter and mix
  • Place mixture into a measuring cup for convenient pouring into the muffin tin
  • Add additional sprinkles to the top of each muffin, if desired
  • Bake for 25 minutes and let cool for 5 minutes
  • Enjoy!
