Quick and Easy Chicken Caesar Salad


This week I had to work late so wanted to put something together that was easy and delicious. The Chicken Caesar Salad I made came out delicious so I wanted to share the recipe with you. Enjoy!


  • 1 medium breast of chicken
  • 1 cup of spinach
  • 1 cup of kale
  • 2 cups of romaine
  • Half a cup of broccoli
  • 4 tablespoons of Caesar dressing
  • Splash of olive oil
  • 1/4 a cup of croutons
  • 1/2 a cup of shredded of mozzarella
  • Garlic powder (to taste)
  • Salt (to taste)
  • Pepper (to taste)


  • Place the spinach, kale, romaine and broccoli in a large bowl with 2 tablespoons of dressing
  • Add the croutons and toss the salad
  • Add the additional 2 tablespoons of dressing, splash of olive oil, mozzarella, garlic powder, salt and pepper
  • Boil chicken until it hits 165 degrees, shred it, let it cool and add to salad

  2. Bom dia. Thank you for giving us an easy to follow recipe for this seemingly common dish, which we usually get right in a resto and not at home. I loved your pictures of the preparation, something that is usually overlooked in the best cooking blogs like the NYTimes where they only post one of the final dish.
